Recipe: Lentil Ham Soup
Ingredients:
1 cup dried lentils
2 cups diced ham
1 onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish (optional)
Instructions:
Start by rinsing the lentils under cold water and removing any debris or stones. Set aside.
In a large pot, heat the olive oil over medium heat. Add the diced ham and cook until slightly browned, about 5 minutes. Remove the ham from the pot and set aside.
In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute.
Return the ham to the pot and add the rinsed lentils, chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Stir well to combine.
Bring the soup to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the lentils are tender.
Remove the bay leaf and serve the soup hot. Garnish with fresh parsley if desired.
