Spicy Beef Burritos Recipe

Ingredients:

1 pound of lean ground beef
1 tablespoon olive oil
1 onion, diced
2 cloves of garlic, minced
1 jalapeno pepper, seeds removed and minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (adjust according to your spice tolerance)
Salt and pepper to taste
1 cup cooked rice
4 large flour tortillas
1 cup shredded cheese (cheddar or Monterey Jack works well)
Optional toppings: sour cream, guacamole, salsa, chopped fresh cilantro

Instructions:

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and jalapeno pepper, and cook for another minute.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat from the skillet.
Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Cook for another 2-3 minutes to allow the spices to bloom and infuse the beef with flavor.
Add the cooked rice to the skillet and stir well to combine. Cook for another 2-3 minutes until the rice is heated through.
Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
Divide the beef and rice mixture evenly among the tortillas. Top with shredded cheese and any optional toppings of your choice.
Roll up the burritos by folding in the sides and then rolling them tightly from the bottom up. Secure with toothpicks if needed.
Place the burritos seam-side down in a baking dish and bake in a preheated oven at 350°F for 10-15 minutes, or until the cheese is melted and the burritos are heated through.
